In the recipe, malai paneer, khoya and milk are ground together for a thick and creamy mixture and then whipped well with sugar, cardamom powder and maida into a thick batter. It is then deep fried in to multiple malpuas in ghee, dipped into fresh sugar syrup made of sugar, saffron, cardamom and dry fruits. - For Malpuas: Soak suji in water for 5 mins.let it become thick..
- Now pour this mixture to suji batter.mix them nicely.if thick,add more..but it should not be runny..
- Add fennel seeds and baking soda to this.Again give it a good mix and keep aside..
- In another pan,boil water and sugar to make a sugar syrup simultaneously.Make sure the syrup remains warm..
- In a pan,add ghee.pour the batter in the centre and let it fry from both the sides. Take it out and Quickly dip them into sugar syrup..
- Make all the Malpuas following the same procedure..
- For Rabri: Boil milk in a heavy bottom kadai.let it simmer on sim for 30 mins.Scratch the sides from time to time.When the milk turns very thick, add saffron and sugar.Stir continuously for 1 more min and switch off the flame. Serve chilled with hot malpuas😋.
