  1. Sieve flour and baking soda in a bowl. Add ghee and mango purée to it..
  2. Bring together the flour and other things slowly to make a dough. Cover and keep this for 10-15 minutes..
  3. To make sugar syrup put sugar and water in a pan on gas..
  4. Add saffron strands, cardamom powder and lemon juice to it. Cook the sugar syrup till single thread consistency..
  5. Heat oil in a big wok for frying..
  6. Make a rectangular slab with the dough. Cut into 2 pieces and keep one part on the other..
  7. Repeat the same process 5-6 times and then make a cylindrical shape..
  8. Cut into equal size pieces and roll them into round shapes and make a hole in centre..
  9. Fry all the balushahis on low flame till golden brown..
  10. After frying soak them in sugar syrup for 5-10 minutes then take them out and let them cool..
  11. Garnish with pistachios and serve..
