Restaurant style mutton Biryani and mutton masala instructions

  1. For preparing mutton biriyani, first pressure cook the mutton pieces for 5 to 6 whistles..
  2. Then place a briyani pan, add 6 tsp of oil and 3 tsp of ghee. As the oil and ghee gets heated, add the spices and sliced onions. Fry the onion untill it's colour change to brown colour..
  3. Then add tomatoes and ginger garlic paste. As tomato becomes soft, add the pressure cooker mutton in it..
  4. Then put all masala and curds stir well, as curd must be dired. Then add coriander leaves and mint leaves..
  5. Then take another pan, add a spoon of ghee and roast the basmati rice for a while..
  6. Then add water on briyani pan, as the water starts to boil add the toasted basmati rice and add required amount of salt and some coriander and mint leaves, then close the lid and place a weight over the lid..
  7. After 15 mins, open the lid and add orange food colour with some water. This step is optional because I will expect briyani to much colourful..
  8. Then keep the stove at low and cook it for 15 mins and sprinkle some coriander and mint leaves..
  9. For preparing mutton masala, first pressure cook the mutton pieces and take a pan and add 4 tsp of oil. Then add the spices, curry leaves, green chillies & chopped onion.
  10. As the onion are browned, add the masala and mix it well as raw masala smell goes..
  11. Then add tomatoes, as the tomato becomes soft, then pressure cooked mutton in it with cooked mutton water also and mix it well..
  12. Close the pan with a lid and cook until the pressure cooked water gets dry till as semi gravy..
  13. Then sprinkle some coriander leaves and turn off the stove..
  14. Then I'm serving mutton Biryani, mutton masala with some onion raitha and some cucumbers..
