Ingredients of Jali samosa
- It's 2 cup of All-purpose flour / maida.
- It's 1/4 cup of Clarified butter / ghee.
- You need 1 pinch of Carom seeds.
- It's 1 pinch of Onion seeds.
- You need to taste of Salt.
- It's As needed of Oil for frying.
- It's of For stuffing.
- Prepare 4 of Boiled potatoes.
- It's 4-5 of Chopped cashew nuts.
- Prepare 1 tbsp of Raisins.
- It's 1/4 tsp of Chopped green chilli.
- It's 1/2 tsp of Red chilli powder.
- It's 1 tsp of Coriander powder.
- It's 1/4 tsp of Turmeric powder.
- You need 1 tsp of Ginger garlic paste.
- Prepare 1/2 tsp of Roasted cumin seeds powder.
- You need to taste of Salt.
- It's 1/4 Tsp of Fenugreek seeds.
- Prepare 1 tbsp of Chopped coriander leaves.
You can use all-purpose flour as a substitute. I was hoping to get the taste of the samosas that I had some years ago but using this recipe didn't do it. I made this Samosa Chaat the day I made homemade Samosa but I couldn't get around sharing it until today. With Diwali and the festive season around the corner, this would make a great party appetizer!
Jali samosa step by step
- Take all-purpose flour/maida,clarified butter,carom seeds,onion seeds and salt and mix well..
- Make a crumb like texture..
- Knead a soft dough and keep aside for 30 mins..
- Boil potatoes and peel and crush them..
- Heat 2 tbsp oil in a pan..
- Add fenugreek seeds to crackle..
- Then add ginger garlic paste,green chilli,coriander powder,red chilli powder and turmeric powder and mix well..
- Add boiled and crushed potatoes,salt and roasted cumin seeds powder and saute for one mins.
- Don`t mash the potato completely just crumble it with hand..
- Add cashew nuts and raisins and mix well..
- Add coriander leaves and mix well..
- Now stuffing is ready..
- Let it cool..
- Now roll a small dough just like chapati..
- Cut it in two halves..
- Make cuts in one half,apply maida paste on all sides and cover with other half.
- Apply water to half of cut shape it cones press it..
- Stuff the potato filling..
- Seal the edges of samosa..
- Heat enough oil in a pan..
- Place the samosa,lower the heat and fry till light brown..
- Serve hot jali samosa with tea..
