- It's of rice, sona masuri or dosa rice.
- You need of urad dal with out skin.
- It's of suji (semolina).
- Prepare of methi (fenugreek)seeds.
- It's of thin poha beaten rice.
- You need of water for soaking.
- Prepare of salt.
- It's of for vegetable.
- You need of medium sized onion, finely chopped.
- You need of green,red,yellow capsicum, finely chopped.
- It's of medium sized tomato, finely chopped.
- You need of carrot, grated.
- Prepare of coriander leaves, finely chopped.
- You need of curry leaves, roughly chopped.
- It's of green chilli, finely chopped.

Mixed Veg Crispy Uttapam step by step
- In a large bowl, soak 3 cups of rice and methi seeds and on other bowl soak Urad dal over night or for atleast 5 hours..
- Blend the soaked rice along with poha adding water if required. collect it into a large bowl and keep aside..
- Than soaked urad dal into blender and blend to smooth and fluffy batter. transfer to the bowl of rice batter.mix well.cover and ferment in a warm place for 7-10 hours..
- Than add salt and Suji to the batter and some water and mix well.rest for 15 minutes add all prepared vegetables in batter mix well.
- Heat non stick pan add some oil than add rai and curry leaves and pour a ladleful of the batter on it and spread it in a circular thick motion..
- Then cover it with a lid and cook on medium flame.let it fry turn it until the base of the uttapam turns golden brown both sides..
- Serve veg crispy uttapam immediately with coconut chutney and sambar..
