  1. Wash and soak the rice for 30 minutes..
  2. Peel the skin, wash it and chop the vegetables..
  3. Heat oil and ghee in a pan/pressure cooker and temper with whole spices listed under temper..
  4. Add the finely chopped onions, slit green chillies and saute it nicely. Then add ginger garlic paste and saute till the raw smell goes..
  5. Then add tomatoes and saute till it becomes mushy..
  6. Next, add finely chopped coriander and mint leaves and saute till it shrinks..
  7. Finally, add the chopped veggies and saute for 3-4 minutes..
  8. Then add curd to the mix. Next add salt, red chilli powder, coriander powder, turmeric powder, cumin powder and garam masala..
  9. Saute for few minutes and add the water and allow it to boil..
  10. Once it boils add the washed rice. Allow it to cook in medium flame for 5 minutes. Then close the lid and allow it to cook for 10 minutes in low flame till it is done..
  11. Open the lid and gently fluff it up. Vegetable biryani is ready. Serve it with raita..
