It is then cooked in milk or coconut milk sweeten with jaggery or sugar.
Paal Kozhukattai (Rice dumplings in sweetened coconut milk) step by step
- Add milk, salt and 3/4 th cups of water to a non stick pan and bring to a boil.
- Once on a roaring boil, reduce heat and add the ghee and mix.
- Add the rice flour next and mix on Low heat continuesly as the mix comes together to form a lump.
- Take off heat and place the flour mix on a plate to cook a bit.
- Add 2 teaspoons of ghee to the mix once cool and knead slightly.
- Now grease your palms and create small balls out of the mixture and place them in a bowl.
- Melt the jaggery using 1/4 th cup water and strain the water into a non stick pan to remove any impurities.
- Add 3/4th cups of water now and bring to a boil.
- Once boiling reduce heat and add the rice balls prepared and mix gently.
- Now cover and let simmer for 4-5 minutes.
- Once done, add the coconut milk and cardamom powder.
- Mix gently and cook covered for 2-3 minutes on Low heat.
- Once the mixture has thickened to your desired consistency, take off heat and transfer into a serving bowl.
- Serve as a Diwali Prasad to the lord and enjoy the kozhukattai warm or cold with your family.
