Ingredients of Mat Samosa

  1. Prepare 2 cup of Plain flour.
  2. Prepare 1/2 cup of Mint leaves paste.
  3. You need 1/2 cup of Thick tomatoes purée.
  4. It's 1 tsp of salt.
  5. Prepare 1 tsp of Ajwain/carrom seeds.
  6. It's 2 tbsps of oil.
  7. It's 1 tsp of Jeera /cumin seeds.
  8. It's 1/2 tsp of Ginger Chopped.
  9. You need 2 piece of Green chilli chopped.
  10. It's 2 tsp of Coriander Powder.
  11. It's 1 tsp of red chilli powder.
  12. You need 1 tsp of amchur (dry mango)powder.
  13. It's 1/2 cups of boiled peas.
  14. It's 1/2 tsp of Garam Masala.
  15. You need 1/8 tsp of hing / asafoetida.
  16. It's 1 cup of boiled & mashed potatoes.
  17. You need as needed of Oil to fry.

Mat Samosa step by step

  1. Add 1 cup maida, salt, ajwain,2 tbsp oil,mint leaves paste and make a soft dough using sufficient water. Rest it for 15minutes..
  2. Now add another cup of maida,tomatoes purée,salt and ajwain,water and make neither soft nor hard dough.Rest for 15 minutes..
  3. For stuffing heat a pan add oil,jeera, hing, ginger, green chilli, cook on medium flame and saute it. Add red chilli powder, coriander powder, jeera powder, garam masala saute it on low flame. Now add mashed potatoes cook on low flame..
  4. Now add salt, amchur, boiled peas mix it well, saute for 5 mts on low flame,niw add fresh coriander..
  5. Make small balls from different colours dough, roll it like puris, now cut them in rectangle shape. Cut it in half from larger side, put one part on another in opposite direction and get a plus sign..
  6. Now on the centre part put potato mixture. Wet the edges with water, now put one part and cover the potato mixture,seal the corners with little water. Now do the same with next part..
  7. Cut the remaining two portio to get strips, (do not separate it).take one strip and cover the potato mixture, now take strip from another part and make a mat design with them., Do this one by one,seal the corners with little bit water..
  8. Now deep fry them, until it turns golden from both sides..
  9. Serve hot..
