Ingredients of Mutton Biryani

  1. Prepare 1 kg of mutton.
  2. You need 4 of +2 onions.
  3. You need 2 tablespoon of ginger garlic paste.
  4. Prepare 1.5 tablespoon of red chilli powder.
  5. It's 1 tablespoon of garam masala powder.
  6. You need 3 tablespoon of coriander powder.
  7. It's 1/2 cup of curd.

  12. You need 3/4 cup of ghee.
  13. Prepare 10 of peppercorns.
  14. You need 2 of black cardemoms.

  17. It's 2 of " piece cinnamon stick.
  18. It's 1 of star anis.
  19. Prepare 1 teaspoon of black cumin seeds.

Mutton Biryani step by step

  1. Wash and soak basmati rice for 30 minutes.Drain and keep aside..
  2. In a pressure cooker heat oil,fry thinly sliced onions till golden.Add mutton and cook on high flame till water dries..
  3. Add ginger garlic paste,coriander powder,turmeric powder,red chilli powder and salt..
  4. Add 1/2 cup water,stir well and cook for 3-4 minutes on high flame.When oil leaves the edges of vessel,add 1.5 cups water and cover the lid..
  5. Pressure cook on high till 2-3 whistles.Cook on medium flame for 3-4 minutes.Let pressure release..
  6. Add garam masala powder and curd,stir and dry water of mutton if any.Keep aside..
  7. For rice,heat ghee in a heavy bottomed vessel.Fry 2 thinly sliced onions till golden brown.Take out and spread on paper towel.This will be used in garnishing..
  8. Add whole spices in remaining ghee,add basmati rice and salt.Mix and add 2 litres of hot water.Adjust salt..
  9. Cover the vessel and cook on high flame till water boils.Add half fried onion.Lower the flame to medium..
  10. Cover and cook the rice to 70%done.Stir in between.Don't over stir the rice to prevent breaking of grains.Try to stir with the thinner pot of skimmer(kafgeer)..
  11. Now make a well in between the rice,add mutton and cover from rice.Cover the lid and further cook on low flame for 4-5 minutes..
  12. Check the rice,(add a dash of water if needed.).
  13. Take water,add kewra water and orange colour to it and pour over biryani.Cover and leave for 5 minutes..
