- You need 1 cup of Basmati Rice.
- It's 1/2 cup of green peas soaked overnight.
- It's 1 of capsicum chopped.
- Prepare 1 of Carrot chopped.
- It's 2 of Onion chopped.
- You need 1 tsp of mint paste.
- Prepare 7 cloves of garlic.
- It's 2 inchs of ginger.
- It's 2 of cardamom.
- You need 1 inch of cinnamon.
- Prepare 6 of peppercorn.
- Prepare 3 of cloves.
- You need 1 tsp of coriander powder.
- Prepare 1/2 tsp of pepper powder.
- It's 3 of green chilli.
- It's 3 tsps of ghee.
- You need 1 of lemon.
Simple one pot Veg Pulao instructions
- Wash and soak rice for half an hour.
- Coarsely crush ginger and garlic and keep aside.
- Chop the vegetables and onion.
- Dry roast the spices and grind to a smooth powder.
- Slit open the green chilli and keep aside.
- Add 2 tsp of ghee in pressure cooker.
- Add chopped onions and saute till its cooked well.
- Add coarse ginger garlic mixture and saute well.
- Add the chopped vegetables, rice and green peas and slit green chilli to the pressure cooker.
- Add coriander powder and pepper powder and the ground spices to the pressure cooker.
- Squeeze juice of lemon into the cooker.
- Add 3 cups of water to the cooker (depends on the rice used).
- Close the pressure cook and Pressure cook for 3 whistles.
- After opening the pressure cooker top the Pulao with 1 tsp ghee and roasted cashews.
- Serve pulao hot with raita.
- Variations :.
- Add caramelised onion to the pulao by frying sliced onion in ghee.
- Instead of directly adding Basmati rice to the cooker, saute the rice in 2 tsp of ghee.
- Sauteed rice gives non sticky pulao.
