Heat oil in a small pan. Splutter mustard seeds and fry a few curry leaves. After soaking Moong Dal will be double in volume. I enhance the same salad by adding equal amounts of chopped cucumber and tomato, a little less of chopped beetroot.

  1. Clean and dice the cucumbers and carrots and set aside.Peel the pomegranates extract the pearls and set aside..
  2. Soak dal for an hour and mix it with everything..
  3. Mix grated coconut with with moong mixture.Add salt and lemon juice. Mix the salad together..
  4. In a small pan add the ingredients for tempering except the curry leaves.  As the mustard seeds splutter add in the curry leaves and take off the heat.  Set aside..
  5. Now put tempering on top of salad and mix properly. Salad is ready to serve..
