- You need 3 of leftover rotis/parathas/tortillas.
- Prepare 1/4 teaspoon of black mustard seeds.
- It's 1/4 teaspoon of turmeric powder.
- It's 1/4 teaspoon of ground cumin.
- Prepare 1/2 of green chilli (coarsely chopped).
- It's 1/4 teaspoon of sugar.
- It's 3 teaspoon of cooking oil.
- Prepare to taste of Salt.
- Prepare of Toasted Cashew nuts to garnish.
- Prepare of Raisins to garnish.

- Take your leftover rotis/parathas/tortillas and break them into small pieces and transfer to a foil-lined baking tray..
- In a saucepan, heat some oil. Add black mustard seeds and chopped green chilli to it. Toss the roti pieces so that they’re evenly covered in oil. Now mix in the turmeric powder and ground cumin. Season with salt.
- Now transfer the mix into a foil lined baking tray and bake at 180C for 10 - 15 minutes or until golden brown..
- Take the tray out of the oven, mix in the sugar and transfer to another plate to let it cook. Please note that the roti chevdo gets it’s crunch once it’s cool (at room temperature).
- Once cooled, garnish with toasted cashews and raisins.. Happy snacking! [This keeps for up to a 3 weeks in an air tight container! ].
