Ingredients of Rasmalai
- Prepare 1 cup of sugar.
- Prepare 1 tsp of Powdered sugar.
- It's 2 litre of Full tone milk.
- You need 3 tbsp of Condensed milk.
- You need 1 tbsp of Vinegar.
- It's 1 tsp of Green cardamom powder.
- You need 1/8 tsp of Saffron.
- It's 1 tsp of Chopped Almonds.
- It's 1 tbsp of Chopped pistachios.
- You need as needed of Few petals of rose.
- You need 6 cups of Water.
Ras Malai is dumplings made from cottage cheese soaked in sweetened, thickened milk delicately flavored with cardamom and. Rasmalai is the Indian version of soft and spongy flattened paneer (cottage cheese) balls that are soaked in thickened saffron milk and garnished with silvered dry nuts. - Boil 1 litre milk in a pan.
- When it reaches boiling point then add vinegar.
- Let it boil for 2 minutes till you see curdling and cheese getting formed.
- Switch off the flame.
- Cool a bit and drain the water.
- Tie in a muslin cloth and rinse twice with cold water..
- Now squeeze it to make the water out.
- Hang the cheese in the Muslim cloth for 30 minutes.
- Take out the cheese from the cloth.
- Cheese should be dried with no moisture.
- Now crumble the cheese and knead with your palm for at least 10 minutes.
- When the dough starts releasing the oil then you stop kneading the dough..
- Divide the dough into 10 equal sized balls.
- Now start boiling rest of the milk for 5 minutes.
- Add Saffron, Cardamom powder,and condensed milk on a low flame.
- In the meantime add 1 cup sugar and 5 cup of water in a big kadhai.
- When the water starts boiling flip the balls very carefully in the boiling water.
- Cover the lid and cook it for 5 to 7 minutes.
- When size of the balls become double switch off the flame and take out the balls very carefully.
- Dip these balls into the prepared rabri and let it cool. Now garnish it with pistachios and rose petals..
