  2. Prepare 2 numbers of potatoes.
  3. Prepare 2 numbers of red onions.
  4. Prepare 8 - 10 cloves of garlic chopped.
  5. You need 2 numbers of tomatoes.
  6. It's 3 tablespoons of olive oil.
  7. It's 1 tablespoon of butter.

Aloo Baingan Theeka Masala step by step

  1. Slice the baingan into halves and potatoes into chunks and boil the potato. Shallow fry the eggplants and potatoes seperately..
  2. In a  kadai,saute the garlic,ajwain and onions with little salt. When translucent,add the masalas,except garam and tikka masala. Mix well and let it cook for 2 mins..
  3. Add the chopped tomatoes ad stock. Put the fried vegetables that is potatoes and baingan. Stir well..
  4. Cover and cook for 5-10 mins. Open.add the kasurikasuri,tikka masala,ketchup and garam masala. Season with necessary salt..
  5. Garnish with the fresh coriander leaves..
  6. Serve hot with nair oil chapati!.
