  1. It's 1 cup of Raw rice/pacharisi.
  2. You need 1 1/2 cup of Kalkandu/rock sugar.
  3. You need Pinch of Pacha Karpooram/edible camphor.
  4. You need 5-10 of Cashews.
  5. Prepare 5 of Raisins.
  6. Prepare 5-6 tbsp of Ghee.
  7. Prepare 2 of cardamom.
  8. You need 2 cup of milk.
  9. You need 2 cup of water.

  1. In a pressure cooker add washed raw rice, cardamom and a pinch of edible camphor.Now add water and milk. Pressure cook rice for 4 -5 whistles in medium flame. Pacha Karpooram gives the authentic divine aroma to this recipe..
  2. Mash the rice well, add powdered kalkandu and ghee. Mix well and cook the rice for some more minutes on stove..
  3. Powdered kalkandu melts on heat, so the texture become watery, it will thicken when warm. After the rice is cooked, fry the cashews and raisins in ghee and added to the rice..
  4. Now the delicious kalkandu pongal is ready to serve hot. Note: Rice and water ratio is differ from each other because of the type and quality of the rice used. When the cooked rice is sticky add more warm milk,mix well and serve..
