Ingredients of Carrot Barfi
- Prepare 2 cup of carrot grated tightly packed.
- You need 1/2 cup of milk.
- It's 2 tbsp of ghee.
- It's 1/4 cup of sugar.
- It's 1/4 teaspoon of cardamom powder.
- You need 1-2 tbsp of chopped nuts.
- Prepare 1/4 cup of milk powder.
Carrot Barfi step by step
- In a large kadai heat 2 tbsp ghee and roast grated carrots.
- Saute carrots for 5 minutes.
- Add in milk and mix well.
- Boil for 5 minutes or till the carrot turns soft,stirring occasionally, till the milk reduces completely and thickens..
- Add sugar and mix well till the sugar melts and thickens..
- Add milk powder and mix well until lump free.
- Add in cardamom powder and mix well. Cook until mixture thickens.
- Transfer the prepared mixture into greased plate lined with baking paper, level evenly to form a block.
- Top with chopped nuts and press slightly.Set aside until barfi is completely set.
- Unmould and cut into square pieces. Serve carrot burfi immediately or store in airtight container until 3-4 days.
