- Prepare 1/2 cup of jeera rice(optional).

- Pressure cook basmati rice or jeera rice(I have used half measurement each but jeera rice is optional). let it be 5- 6 whistles.Once the pressure releases naturally, open the lid. Smash the rice well. Keep it ready..
- Now in a large heavy bottomed kadai, add 1 cup of ghee. once it clears add sugar and rice. start stirring on a medium flame for 5 minutes..
- Once sugar melts and rice settles down, add saffron milk, crushed cloves and stir continuously. meanwhile, in a small pan add 1 tbsp ghee and fry raisins till they bulge. similarly, you can fry cashews.while you keep stirring the rice kesaribath, add the raisins and remaining cup of ghee..
- If you feel ghee is less, you can add more. more the ghee tastier..
- After 30 minutes or so rice starts thickening and ghee starts oozing out..
