Ingredients of Jevvarisi Payasam (Tapioca Pudding)

  1. Prepare 1/4 cup of Sago Pearl (Sabudana or Jevvarisi).
  2. Prepare 1.5 cups of Milk.
  3. Prepare 1/3 cup of Sugar (adjust to taste).
  4. Prepare 1 tablespoon of Butter Clarified (Ghee).
  5. It's 6 - 8 of Cashews , broken.
  6. Prepare 1 teaspoon of Cardamom (Elaichi) Powder.
  7. Prepare 1/2 teaspoon of Kesari (Saffron) or (edible Orange Color) (optional. you can skip it & make the pudding in white color).

Jevvarisi Payasam (Tapioca Pudding) step by step

  1. Soak the sago pearls in water for about half hour to 1 hour. This makes it easier for them to cook fast while boiling..
  2. Drain water from sago. Add milk to the sago. Let it boil until the sago pearls are soft. (around 8 minutes on medium).
  3. Add the saffron/ orange color & mix well.
  4. Add sugar & mix well. Let it boil for another 3-5 minutes. Switch off the flame.
  5. In another small pan, heat the Ghee. Fry cashew nuts until light brown.
  6. Add the fried cashews along with all the ghee to the milk - tapioca & mix well.
  7. Add the Elaichi / Cardamom powder & mix. Serve warm or cold as you like.
  8. You can store this covered in a vessel or air tight container.
  9. This will stay well for 1-2 days only..
  10. When you store in the fridge, it will solidify a bit. You can have as is, or warm it up and use a little milk or water to loosen it as per your desire.
