Ingredients of Jevvarisi Payasam (Tapioca Pudding)
- Prepare 1/4 cup of Sago Pearl (Sabudana or Jevvarisi).
- Prepare 1.5 cups of Milk.
- Prepare 1/3 cup of Sugar (adjust to taste).
- Prepare 1 tablespoon of Butter Clarified (Ghee).
- It's 6 - 8 of Cashews , broken.
- Prepare 1 teaspoon of Cardamom (Elaichi) Powder.
- Prepare 1/2 teaspoon of Kesari (Saffron) or (edible Orange Color) (optional. you can skip it & make the pudding in white color).
Jevvarisi Payasam (Tapioca Pudding) step by step
- Soak the sago pearls in water for about half hour to 1 hour. This makes it easier for them to cook fast while boiling..
- Drain water from sago. Add milk to the sago. Let it boil until the sago pearls are soft. (around 8 minutes on medium).
- Add the saffron/ orange color & mix well.
- Add sugar & mix well. Let it boil for another 3-5 minutes. Switch off the flame.
- In another small pan, heat the Ghee. Fry cashew nuts until light brown.
- Add the fried cashews along with all the ghee to the milk - tapioca & mix well.
- Add the Elaichi / Cardamom powder & mix. Serve warm or cold as you like.
- You can store this covered in a vessel or air tight container.
- This will stay well for 1-2 days only..
- When you store in the fridge, it will solidify a bit. You can have as is, or warm it up and use a little milk or water to loosen it as per your desire.
