- It's 2-3 tbsp of Sugar.

- Take a broad bottom pan.pour milk and start boiling. Slow the flame otherwise milk will overflow..
- Take a big spoon and insert it in the pan.when milk boils,slow the flame..
- Alternatively change the flame form medium to high or medium to slow. After 3 to 4 boils,cream starts seperating and starts coming up.Gentle stick the malai to the Walls of the pan..

- It will take approximately 1 hour or little more to make rabdi.when milk is redused to 1/4 quantity, scrape the milk flakes from the sides of the pan carefully. Add 2 tbsp sugar and stir gently to mix sugar.Mix very gently for 30 seconds and then switch of the gas. Add cardamom powder and just a drop of kevra essence..
