- You need 1 cup of potato & 1 cup cauliflower cut into medium to small pieces (equal quantity of potato and cauliflower).
- You need 1 cup of tomato puree.
- It's 1 of chopped tomato.
- You need 2 of chopped green chillies.
- You need of Ginger chopped and green coriander.
- You need 1/2 tsp of cumin seeds (jeera).
- Prepare 2 tbsp of dry coriander powder.
- Prepare 1/2 tsp of garam masala.
- You need 1/2 tsp of turmeric.
- Prepare 1/2 tsp of red chilli powder.
- It's 1 tsp of dry mango powder optional (depends on sourness of tomatoes).
- You need 1 pinch of Asafoetida (hing).
- You need to taste of Salt accordingly.
- It's of Oil to fry and cook.
Aloo Gobhi masala recipe: instructions
- Deep fry potato and cauliflower till golden brown in hot oil..
- Heat 2 tbsp oil in a pan or kadai and add hing, cumin seeds green chillies and ginger. Cook for half a minute on high flame..
- Add turmeric, dry coriander powder and cook for another 30 seconds..
- Add tomato puree and cook it with all the spices left (masalas) till it leaves oil..
- Now add fried potato and cauliflower along with chopped tomato and coo it for 3-4 minutes..
- Add a little water if sabzi looks dry..
