  1. First we shall make the lemon rice.Take a non stick pan or kadhai..
  2. Put oil and when hot add the mustard seeds,jeera and split urad dal.After it splutters add the chopped onion, ginger, green chilli & curry leaves,then saute well..
  3. Then add the turmeric powder and salt..
  4. Put the cooked rice and squeeze in the lemon. Add the peanuts.Mix well..
  5. Garnish with chopped coriander leaves.Serve hot with any raita,bittergourd chips, papad etc..
  6. For the beetroot pachadi take a kadhai put the coconut oil and when hot add the mustard seeds..
  7. After it splutters add the chopped green chilli,ginger & garlic and curry leaves.Saute well till the raw smell goes away..
  8. Now add the grated beetroot and cook for a few minutes..
  9. Then turn off the gas..
  10. When it is cool enough,add the whipped curd, chopped shallots,jeera powder and salt.Then mix well..
  11. Garnish with chopped coriander leaves,and serve chilled as an accompaniment with your rice..
