  1. Prepare 1/2 cup of semiya (vermicelli).
  2. Prepare 1/2 litre of cream milk.
  3. Prepare 4 tbs of sugar(according to taste).
  4. You need 1/4 cup of finely chopped dry fruits.
  5. You need 1/2 tbsp of ghee.
  6. You need 5-6 strands of saffron.
  7. You need 1/2 tsp of cardamom powder.

Seviyan is a delicious and an easy recipe to make. Method: I used seviyan vermicelli which was meant for payasam. Heat ghee in a pan, Roast vermicelli in low flame till slightly golden. Let it cook until semiya turns soft.

  1. Heat the milk in a pan on low flame. Take 1 tbs milk in small bowl and keep saffron strands in it. Keep aside..
  2. In another pan heat the ghee on low flame. Add semiya and roast it until golden brown. Switch off the gas. Keep aside..
  3. Boil the milk and stir occasionally. When milk comes to boil add sugar. Cook and stir continuously till sugar dissolve completely. It will take around 5 minutes..
  4. Now add roasted semiya and cook and stir till semiya becomes soft. Add dry fruits and cardamom powder. Mix well..
  5. Switch off the gas. Let it cool down completely. Now add soaked saffron mix well and serve..

Seviyan Kheer, Semiyan Payasam or Vermicelli pudding are similar desserts made during festivals or winter months. They might vary a bit depending on the region.
