Shahi tukda is one of the most popular Indian desserts. True to its name it is a 'shahi' delight! Pieces of bread are dipped in delicious saffron flavoured sugar syrup and topped with rich and creamy rabdi. Shahi Tukda recipe is a rich dessert dish from heaven of India Kashmir.

Shahi Tukda step by step

  1. Soak almonds in hot water for 15 minutes, then peel it and chop and keep it aside, roast cashew nuts and chop it. Keep it aside. Soak saffron in 2tbspn in hot milk..
  2. Cut the corners of the bread and the breads in circle or any other shape you like, traditionally they are deep fried but we can pan fry the breads..
  3. Boil milk on a medium flame. Keep stirring continuously until it reduces to 1/3. Add sugar, chopped nuts, cardamom powder and saffron strands soaked milk. Boil the milk for a few more minutes and remove from heat..
  4. In a pan put sugar and water (just enough water to cover the sugar) boil on medium flame until the sugar syrup becomes slightly sticky..
  5. When the sugar syrup is warm dip the bread slices in sugar syrup for two minutes. See that it is well coated on both the sides with the syrup remove and keep it aside..
  6. Arrange all the sugar syrup coated bread slices in a plate. Pour rabri, put a drop of rose essence on top and garnish with chopped nuts, cherriesand rose petals refrigerate and serve chill..
