- Take ½ cup quinoa in a fine strainer and rinse well in running water..
- Heat a pan on medium heat add washed quinoa, dry roast quinoa approx 5-7 minute on low heat.
- Heat 1.5 tbsp oil in a pan. add ½ tsp mustard seeds. once the mustard seeds begin crackling, then add ½ tsp cumin seeds, ½ tsp urad dal and ½ tsp chana dal. Stir and saute on a low flame. saute till the dal‘s turn golden..
- Then add ginger, green chilies, dry red chilli and a pinch of asafoetida, saute for about half a minute on medium heat. Now add chopped onion and 5 to 6 curry leaves..
- Stir and saute on a low to medium flame till the onions become translucent. Then add chopped carrots, chopped french beans,zucchini and frozen peas. mix well. Saute on a low flame for two minutes..
- Then add the quinoa. mix very well and cook for a minute on low flame now add 1.25 cup water, stir well. add salt as per taste and pepper powder.
- Cover the pan with it's lid and simmer on a low flame till the quinoa seeds are a 3/4 cooked, now add broccoli, mix well.
- Once or twice you can stir the upma while it's being simmered. now add lemon juice, mix well.
- When all the water has been absorbed and the grains appear translucent and cooked well, remove the lid and switch off the flame..
