  7. You need 1 of carrot, round slices.
  8. Prepare 1/4 cup of coloured bellpepper, finely chopped.

  11. Prepare 1 of green chilli, finely chopped.
  12. Prepare 2 of garlic, finely chopped.
  13. It's 1/2 tsp of cumin seeds.
  14. It's 1 sprig of curry leaves.
  15. You need 1 tsp of olive oil.
  16. Prepare to taste of Salt.
  17. Prepare 1 tsp of coriander powder.

Vegetable Quinoa step by step

  1. Soak quinoa into water for 5 min. Now transfer it into strainer and wash thoroughly for 3-4 times with water..
  2. Now heat a pan on medium flame, add 1 tsp oil and then quinoa. Keep stirring for 2 mins or until you hear popping sound..
  3. Add water, turmeric and black pepper, give a good stir. Turn flame to the lowest, cover it with lid and let it cook for 12 mins..
  4. After 12 mins, turn off the flame and keep it covered with lid for minimum 5 mins..
  5. Heat a wok, add 1 tsp oil, then garlic and cumin seeds, sauté for few seconds..
  6. Now add curry leaves, green chilli and onion and sauté for another 2 mins..
  7. Add carrot, peas, capsicum, broccoli and saute for a min..
  8. Lastly add coriander powder and salt to taste. Mix well for a min..
  9. Add the cooked quinoa and slightly toast everything for a min..
  10. Serve hot or with chutney..
