- You need 2 cups of pre cooked rice.
- You need 2 tbsp of refined oil.
- You need 1 tsp of mustard seeds.
- It's 1/2 tsp of cumin seeds.
- It's 1 pinch of asafoetida.
- You need 2 tbsp of chana dal soaked.
- It's 10-12 of roasted cashewnuts.
- It's 1 of dry red chilli.
- It's 3-4 of green chillies.
- Prepare 1 sprig of curry leaves.
- It's 1 tsp of ginger grated.
- You need 3/4th cup of coconut fresh grated.
- You need To taste of salt.
Coconut Rice step by step
- Soak chana dal for 15 minutes.Drain and set aside.This rice is best done with cold leftover rice.Heat oil in a pan and sprinkle mustard,cumin seeds,curry leaves,green chillies and 1 dry red chilli.When they crackle,add asafoetida.Then add grated ginger,soaked and drained chana dal.Urad dal may also be added along with chana dal.Fry for few minutes and add roasted cashewnuts.Toss all and add fresh grated coconut. Fry for few minutes.Add salt to taste..
