Red Chicken Curry step by step

  1. In a bowl, mix all ingredients mentioned under marination section.
  2. Add chicken and marinate for 1 hour.
  3. Grind red chilli, garlic with water to form smooth puree.
  4. Heat 3 tbsp oil, add onions and saute until golden brown.
  5. Add chicken with marination and mix well. saute on high heat for 2-3 minutes.
  6. Cover and cook for 20 minutes stirring occasionally on low heat.
  7. Cook uncovered until water evaporates.
  8. Add ground puree, mix well. stir constantly and cook for 10 minutes until raw taste disappears.
  9. Add sugar, salt and water. bring to boil.
  10. Simmer, cover and cook for 10-15 minutes until oil starts to float on surface.
  11. Add coriander leaves and mix well. curry is ready.
