Ingredients of Phirni
- You need 1/2 cup of Basmati rice.
- You need 3/4 cup of brown sugar/sugar.
- It's 1 litre of Full fat milk.
- Prepare 1-2 pods of Cardamon crushed.
- It's strands of Few saffron.
- It's 3-4 tbsp of Chopped pistachios.

- Wash rice for 3-4 times,soak washed rice in water for 30 minutes..
- After 30 minutes strain the rice with strainer to remove excess water..
- Add rice in the mixer grinder and make a rough, grainy paste and keep aside..
- In a deep heavy bottom pan add milk and bring to boil..
- Take 2 tbsp from hot milk,soak saffron strand,stir well and keep aside..
- When milk comes to boil reduce the flame,add rice and allow it to cook on low flame..
- Stir in between so that lumps are no formed and milk is not stick to the bottom..
- Cook till the milk is reduced to half and the rice is completely cooked..
- Add sugar (am using brown sugar you can use regular sugar also)and cook for another 5-7 minutes. Keep stirring continuously or your phirni will stick to the bottom..
- Add crushed elaichi and saffron dissolved milk to phirni and stir well..
- Cook phirni for 5-6 minutes or until it thickness.Turn off the flame and add rose water to phirni..
- Add the finely chopped pistachios. Reserve a little for garnishing..
- Pour phirni into serving bowls garnished with chopped pistachios and saffron strands,allow it to cool down on kitchen counter..
- You should refrigerate it for a few hours before serving and serve chilled..
