  1. Prepare of Basmati rice.
  2. Prepare of Water.
  3. Prepare of fresh pineapple chopped.
  4. Prepare of Desi ghee/oil.
  5. It's of cashew.
  6. Prepare of Macadamia nuts chopped.
  7. It's of Baby corn sliced.
  8. It's of Sweet corn.
  9. It's of Shallots sliced.

Pineapple pulao with macadamia nuts instructions

  1. Wash rice 3-4 times and soak for 20 minutes..
  2. Heat a wide heavy bottom pan over medium heat..
  3. Add 1 tbsp ghee to hot pan,add cashew and saute for few seconds.Remove fried cashew nuts from the pressure cooker and keep aside to be used later..
  4. Now add sliced shallots and cook for 3-4 minutes or until translucent in colour..
  5. Add sliced baby corn,sweet corn and chopped pineapple stir well and cook for 3-4 minutes..
  6. Drain and add rice to the pan,add salt to taste and mix well.(if your pineapple is sour you can add sugar at this stage).
  7. Add 3 cups of water stir well,cover the pan with lid and cook on low heat for 15-20 minutes or until rice is fully cooked..
  8. When rice is fully cooked turn of the flame and add chopped macadamia and fried cashew nuts,mix with light hand..
