Ingredients of Kheere Gajar Ki Barfi
- It's 1/2 cup of grated cucumber/kheera.
- You need 1/2 cup of grated gajar.
- Prepare 2 tsp of ghee.
- It's 4 tbsp of mawa.
- It's 4 tbsp of sugar.
- It's 2 tbsp of finely chopped pistachios.
- Prepare 2 tbsp of finely chopped cashews.
Kheere Gajar Ki Barfi instructions
- Heat a pan on low heat and add 1 tsp ghee, than add grated cucumber and 2 tbsp of sugar.
- Cook on low heat, stirring continuously, until all the moisture evaporates.
- Then add 2 tbsp of mawa, mix well and cook, until the mixture becomes thick and comes together.
- Then spread the mixture in a greased tray, make it even from top with a spoon or katori, sprinkle the chopped pistachios on top and flatten them too, keep the tray in the refrigerator to set.
- In the meantime prepare the mixture with gajar/carrot in the same way.
- Now take out the set cucumber barfi and spread the carrot mixture on top of this evenly, sprinkle chopped cashews on top and flatten them a little so that they stick properly, again keep the tray in the refrigerator to set for half an hour.
- After half an hour take out the tray and cut it in desired shape and sizes, arrange them in a serving plate and serve.
