Ingredients of Kheere Gajar Ki Barfi

  1. It's 1/2 cup of grated cucumber/kheera.
  2. You need 1/2 cup of grated gajar.
  3. Prepare 2 tsp of ghee.
  4. It's 4 tbsp of mawa.
  5. It's 4 tbsp of sugar.
  6. It's 2 tbsp of finely chopped pistachios.
  7. Prepare 2 tbsp of finely chopped cashews.

Kheere Gajar Ki Barfi instructions

  1. Heat a pan on low heat and add 1 tsp ghee, than add grated cucumber and 2 tbsp of sugar.
  2. Cook on low heat, stirring continuously, until all the moisture evaporates.
  3. Then add 2 tbsp of mawa, mix well and cook, until the mixture becomes thick and comes together.
  4. Then spread the mixture in a greased tray, make it even from top with a spoon or katori, sprinkle the chopped pistachios on top and flatten them too, keep the tray in the refrigerator to set.
  5. In the meantime prepare the mixture with gajar/carrot in the same way.
  6. Now take out the set cucumber barfi and spread the carrot mixture on top of this evenly, sprinkle chopped cashews on top and flatten them a little so that they stick properly, again keep the tray in the refrigerator to set for half an hour.
  7. After half an hour take out the tray and cut it in desired shape and sizes, arrange them in a serving plate and serve.
