- You need 2 of Tilapia fillets.
- Prepare of lemon pepper seasoning.
- Prepare of Coconut oil.
- Prepare 1 cup of quinoa.
- You need 1/2 cup of coconut flakes.
- Prepare 1 clove of garlic.
- It's 1 handful of almonds sliced.
- Prepare of flat leaf parsley.
- Prepare 1 of avocado.
- You need 1 of lemon.
Seared Tilapia with Coconut Quinoa instructions
- Start with the Quinoa.
- Add 1 tbl coconut oil to a medium sized pot and turn the heat to med-high.
- Add the quinoa and toast until it pops and browns lightly.
- Add garlic and stir.
- Add 2 cups water and bring to boil. Then turn the heat down to low and cover. Let quinoa absorb water for about 10 - 15 mins, then remove lid..
- Now for the Tilapia. You can do this while the quinoa is finishing..
- Heat a pan with about 1 tbl coconut oil to med-high..
- Pat the fish dry and roll the fish in lemon pepper seasoning (I buy mine from DeKalb farmers market).
- When the oil is hot, add the fish and allow to sear for about 3 minutes each side..
- Add salt and pepper to taste to the quinoa. Also mix in almonds..
- Cut slices of avocado and lemon for serving with the quinoa and fish.
- Sprinkle parsley over everything... it's pretty that way!.
