  2. Prepare 2 Cups of Water to cook the rice.

  5. Prepare 1/2 Cup of grated coconut.
  6. You need 2-3 tbsps of mixed dry fruits.
  7. It's 1 tbsp of raisins.
  8. Prepare 2 tbsps of Desi Ghee.
  9. You need 4 of cardamoms.
  10. It's 4 of Cloves.
  11. It's 1/4 tsp of Cinnamon powder.

  1. Collect all ingredients.Crush Jaggery in powder.Grate or chop coconut.Soak rice for about 20 minutes..
  2. Heat a big pan.Put ghee,add melon seeds and fennel seeds till splutter..
  3. Now on the other side cook the rice until soft but not mushy.We can simply boil the rice and strain them..
  4. Add dry fruits in pan.Now add Jaggery powder,sauté and add 1/2 cup of water.Allow to boil..
  5. Once Jaggery is dissolved,add in cooked rice.Add grated coconut and continue cooking under medium to low flame.Add cardamom powder,cinnamon powder and cover the pan.Sir and cook well until coconut-Jaggery rice becomes thick.Switch off the flame..
  6. Transfer the coconut Jaggery rice in a serving bowl.add chopped pistachios..
  7. Serve by garnishing with chopped coconut and dry fruits.Really healthy and tasty..
