- Collect all ingredients.Crush Jaggery in powder.Grate or chop coconut.Soak rice for about 20 minutes..
- Heat a big pan.Put ghee,add melon seeds and fennel seeds till splutter..
- Now on the other side cook the rice until soft but not mushy.We can simply boil the rice and strain them..
- Add dry fruits in pan.Now add Jaggery powder,sauté and add 1/2 cup of water.Allow to boil..
- Once Jaggery is dissolved,add in cooked rice.Add grated coconut and continue cooking under medium to low flame.Add cardamom powder,cinnamon powder and cover the pan.Sir and cook well until coconut-Jaggery rice becomes thick.Switch off the flame..
- Transfer the coconut Jaggery rice in a serving bowl.add chopped pistachios..
