Ingredients of Quinoa Stir Fry
- Prepare 100 gms of Mixed quinoa seeds (white/black).
- You need 200 gms of (French beans,cabbage,onions,greenpeas,carrot) finely chopped.
- You need Handful of sweet corn.
- It's 1 tsp of olive oil for cooking.
- It's 3-4 of garlic chopped finely.
- Prepare 1 tsp of oil for boiling quinoa.
- You need to taste of Salt.
- You need 1 tsp of soya sauce.
- You need 1 tbs of black pepper powder.
- You need as needed of Water.
Quinoa Stir Fry instructions
- Rise quinoa in a fine colander well and bring 2 cups of water to boil in a sauce pan.
- Add the quinoa in the boiling water along with 1 ts oil and a pinch of salt and let to boil.
- Once boiled for 2 minutes, reduce heat and cook covered for 10-12 minutes till the water is completely absorbed by the quinoa.
- In another saucepan boil veggies like sweet corn and green peas using a cup of water for 5-7 minutes and strain the water and keep aside.
- Once the quinoa is cooked, take off heat keep aside.
- Heat a Tb of oil in a non stick pan.
- Add onions, chopped garlic and sauté for 2 minutes on medium heat.
- Add the other veggies like beans, cabbage, carrots, boiled sweet corn and peas and sauté for 5-7 minutes more.
- Reduce heat and add the quinoa and mix well.
- Add salt to taste, pepper powder and soy sauce and mix well.
- Cover and cook for 2 minutes more on Low heat and then take off heat.
- Serve hot with hot garlic sauce or any sauces of your choice.
- Tip: adding oil while boiling quinoa helps to avoid them getting stuck to the saucepan after they are cooked.
- Tip: Add scrambled eggs or boiled chicken/any meat of your choice for a non- vegetarian variation of this recipe.
