Vegetable handi instructions
- Cut all veggies in small pieces..
- Soak cashews in milk for 1/2 an hour..
- Add all chopped veggies including corn, 1/2 tsp salt and 1/2 cup water in a pressure cooker. Cook until 1 whistle..
- Grind onion, ginger, garlic and cashews in a grinder..
- Grind tomatoes and green chillies separately..
- Heat oil & butter in handi. Add bay leaf, Cardamoms, cloves & javitri. Saute all until brown. Add onion paste. Saute until golden brown. Add tomatoes paste. Saute all gravy until it leaves sides of handi or leaves oil. Add Coriander powder, red chilli powder, turmeric powder and salt. Mix well..
- Add milk cream and khoya. Saute all for 2-3 minutes. Add steamed veggies & paneer cubes. Stir all. Cook on slow heat until gravy thickens..
- Sprinkle Kasuri Methi & Garam masala. Saute for 1-2 minutes on simmer. Remove from gas..
