Rabdi. Rabdi or Rabri Recipe - A classic North Indian dessert recipe made with traditional method. This is made with very minimal ingredients but the taste is out of the world. The main ingredient is Milk (Whole milk or full fat milk) which is thickened slowly on low flame till it is very thick.

Rabdi Jaggery, spices, and nuts are added to it to give it flavor. It is chilled and served as dessert. Rabri is the main ingredient in several desserts, such as rasabali. You can cook Rabdi using 8 ingredients and 4 steps. Here is how you cook it.

Ingredients of Rabdi

  1. It's 1 ltr of milk full cream.
  2. You need 1 tbsp of milk powder.
  3. It's 1 tbsp of corn flour.
  4. It's 1/2 cup of condensed milk.
  5. You need 2 tbsp of dry fruits.
  6. You need 1 tablespoon of cardamom powder.
  7. You need 1 tbsp of ghee.
  8. Prepare 1 tbsp of cherries.

While basundi is slightly thinner, rabdi is thicker in consistency. Basundi is creamier while rabdi has chunks of malai. Making Rabri is a time taking process. So it's advisable to make it while you are already in the kitchen doing something else.

Rabdi step by step

  1. First swich on the burner put milk in the pan on the oven start boiling milk with adding milk powder till milk becomes half.
  2. Add ghee and mix well then add half of dry fruits.
  3. Next add corn flour with adding cool milk slowly keep stirring milk till it becomes thickened and looking delicious.
  4. Last of all rabdi is ready and put rabdi in the serving bowl and then spread remaining dry fruits and cherries.
