  1. It's 1/2 kg of Mutton.
  2. It's 1 of oinon sliced.
  3. Prepare 1 tsp of Garlic paste.
  4. Prepare 1/2 cup of yogurt.
  5. You need 3 tsp of kashmiri red chilli powder.
  6. Prepare 1 tsp of fennel powder.
  7. You need 1 tsp of dry ginger powder.
  8. It's Pinch of asafoetida (hing).
  9. Prepare 1/2 of cinnamon stick.
  10. Prepare 2 of black cardamom.
  11. You need 2 of green cardamom.
  12. It's 4 of cloves.
  13. It's Pinch of nutmeg powder.
  14. Prepare Pinch of Mace powder.
  15. It's 1 of Bay leave.
  16. You need to taste of Salt.
  17. It's 1 cup of mustard oil or any other oil.
  18. Prepare 1/2 of litter Chicken broth (optional).
  19. Prepare of Green coriander leaves for Garnishing.

  1. In a heavy bottomed pan heat mustard oil on high flame. Rogan Josh is traditionally cooked in mustard oil but you can use any other oil of your choice..
  2. When oil is hot,add cinnamon stick,bay leave, asafoetida and oinon. oinon are golden brown.Be careful that oinon don't get burnt..
  3. Add ginger garlic paste, meat and salt and stir well. Let meat fry for 10 minutes over medium heat..
  4. Make a paste of kashmiri red chilli powder in little water and add into meat. Give it a good stir..
  5. Now slowly and gradually add yogurt and keep stirring. Let it cook for 5 minutes over high flame..
  6. Add fennel powder,dry ginger powder, green cardamom,cloves, nutmeg powder, Mace powder in to the meat,stir nicely..
  7. Add water or chicken broth as per the consistency of the curry you want,I have used chicken broth..
  8. Cover the lid and let it cook,if you don't want to pressure cook then it will take 40 to 45 minutes otherwise pressure cook it until soft..
  9. Gravy is medium thick turn of the flame..
  10. Garnish with green coriander leaves..
  11. Serve hot with white rice or naan..
