- It's 1/2 kg of Mutton.
- It's 1 of oinon sliced.
- Prepare 1 tsp of Garlic paste.
- Prepare 1/2 cup of yogurt.
- You need 3 tsp of kashmiri red chilli powder.
- Prepare 1 tsp of fennel powder.
- You need 1 tsp of dry ginger powder.
- It's Pinch of asafoetida (hing).
- Prepare 1/2 of cinnamon stick.
- Prepare 2 of black cardamom.
- You need 2 of green cardamom.
- It's 4 of cloves.
- It's Pinch of nutmeg powder.
- Prepare Pinch of Mace powder.
- It's 1 of Bay leave.
- You need to taste of Salt.
- It's 1 cup of mustard oil or any other oil.
- Prepare 1/2 of litter Chicken broth (optional).
- Prepare of Green coriander leaves for Garnishing.
Mutton Rogan Josh instructions
- In a heavy bottomed pan heat mustard oil on high flame. Rogan Josh is traditionally cooked in mustard oil but you can use any other oil of your choice..
- When oil is hot,add cinnamon stick,bay leave, asafoetida and oinon. oinon are golden brown.Be careful that oinon don't get burnt..
- Add ginger garlic paste, meat and salt and stir well. Let meat fry for 10 minutes over medium heat..
- Make a paste of kashmiri red chilli powder in little water and add into meat. Give it a good stir..
- Now slowly and gradually add yogurt and keep stirring. Let it cook for 5 minutes over high flame..
- Add fennel powder,dry ginger powder, green cardamom,cloves, nutmeg powder, Mace powder in to the meat,stir nicely..
- Add water or chicken broth as per the consistency of the curry you want,I have used chicken broth..
- Cover the lid and let it cook,if you don't want to pressure cook then it will take 40 to 45 minutes otherwise pressure cook it until soft..
- Gravy is medium thick turn of the flame..
- Garnish with green coriander leaves..
- Serve hot with white rice or naan..
