- You need 1 tablespoon of oil.
- It's 1/2 teaspoon of mustard seeds.
- Prepare 1/2 teaspoon of urad dal.
- You need 2 of dried red chilies broken.
- You need 3-4 of curry leaves.
- Prepare 2 cup of thick yogurt.
- It's 1/2 teaspoon of salt or to taste.
- You need 1-2 of green chilies roughly chopped,.
- It's 1/2 teaspoon of turmeric powder.
- Prepare 1 teaspoon of salt.

- Prepare for of Tadka/Tempering.
- Prepare 1 tablespoon of ghee or use oil.
- Prepare 3/4 teaspoon of cumin seeds.
- Prepare 2 tbsp of chopped onion.
- It's 1 tbsp of sambhar masala.
- It's 1/4 teaspoon of hing (asafoetida).
- It's 10-15 of curry leaves.

- Prepare for of Tamarind Juice--.
- Prepare 1 tablespoon of tamarind piece.
- Prepare 1/3 cup of hot water.
Dosa with masala aloo,idli & sambhar,coconut Chutney step by step
- Masala aloo : Heat oil in a pan. Add mustard, curry leaves. Add in onions, chillies. Saute for 2 mins. Add in ginger garlic paste and mix well. Add mashed potatoes and mix well. Add salt and lemon, mix well. Cook for 5 mins.Ready to serve.
- Coconut chutney.In a mixer add coconut, green chilies, ginger, salt and water. Grind to a smooth paste. Transfer chutney to a large bowl. For the tempering heat oil in a small pan on medium heat. Once the oil is hot, add the mustard seeds. Let it pop and then add the hing. Add urad dal, red chilies. Stir until the dal starts changing colour. Add curry leaves, stir and remove pan from heat. Pour the kadka over a bowl of chutney and serve.
- Idli : Add 1 eno packet to the dosa batter mix it well, scoop the dosa batter into idli plate greased with oil.place in steamer and steam for 10 minutes on medium flame or till a knife inserted comes out clean. finally, soft idli recipe is ready to serve along with chutney and sambar..
- Sambhar For tempering/tadaka.In a pot add ghee,cumin seeds curry leaves,for tempering,once ready add hing,chopped onion,saute for 2mins then add some water cook for 30 sec,add salt, sambhar masala,tamarind juice,cook for 1min then add cooked toor dal.let it simmer for 5mins,optional (you can add green chillis, green peas, eggplant & drum stick).
- Dosa batter : Soak rice and dal for overnight in two different bowls, then blend rice and dal differently and gradually.
- Blend till the structure is smooth and add salt to the batter and mix well..
- Furthermore, heat Dosa pan and pour a ladleful of the batter on it and spread it in a circular motion thin circle. also smear a little ghee the over it. cook till the bottom of dosa turns golden brown.finally, fold over to make a semi-circle or a roll and serve immediately with coconut chutney.
