Ingredients of Rajgira Kuttu Samosas

  1. Prepare 1/2 cup of buckwheat/Kuttu Flour.
  2. You need 1/2 cup of Amarnath/Rajgira flour.
  3. It's to taste of Sendha Namak.
  4. Prepare 2 tsp +1 tsp of Oil.
  5. It's As required of Water.

  7. You need 1/4 cup of ground Chironji.
  8. You need 1 of medium boiled potatoes, cubed.
  9. Prepare 3/4 teaspoon of Red Chilli powder.
  10. It's to taste of Sendha Namak.

  12. It's 1/4 teaspoon of Cardamom powder.
  13. It's 2 tbsp of chopped Coriander leaves.
  14. You need 2 tbsp of Ghee.
  15. It's 1 teaspoon of Cumin seeds.
  16. Prepare For deep frying of Oil/ Ghee.

Rajgira Kuttu Samosas instructions

  1. In a bowl, add buckwheat, amarnath flour and sendha namak. mix well.
  2. Add oil, adequate water and knead into dough.
  3. Coat with 1 teaspoon oil. cover and keep it aside.
  4. Heat ghee in a pan and splutter cumin seeds.
  5. Add chironji and potatoes. mix well.
  6. Saute until chironji is well fried.
  7. Add in cardamom, rock salt, chilli powder and pepper. mix well for a minute.
  8. Add in coriander leaves and mix well. keep it aside.
  9. Roll the dough into slightly thicker circles and cut into halves.
  10. Apply water over the edge.
  11. Take 1 half.l fold straight edge at centre and join overlapping the other edge to form cone.
  12. Fill cone with filling. gently seal edges completely.
  13. Deep fry over medium heat until golden brown.
  14. Fry few green chilies as accompaniment until it lightly changes colour.
  15. Drain excess oil over tissue paper.
  16. Serve hot with chillies and chutney.
