Ingredients of Kaju Barfi
- It's 1 cup of cashews.
- Prepare 1/4 cup of water.
- Prepare 1 teaspoon of ghee.
- It's 1/2 cup of sugar.
- Prepare 1/8 teaspoon of cardamom powder.
Kaju Barfi step by step
- Grind cashews to fine powder and keep it aside.
- In a non stick pan, add sugar and water. Mix well.
- Keep stirring to form sugar syrup of 1 string consistency.
- Add in sieved cashew powder and mix well over low heat.
- Add cardamom and mix well.
- Once mixture starts forming a dough, add ghee and mix well..
- Transfer mixture to Greased butter paper.
- Grease palms with ghee and knead cashews mixture to smooth dough while still warm for 30 seconds.
- Cover the mixture with another butter paper and roll with rolling pin of desired thickness. Remove top butter paper.
- Decorate top with silver varq if required.
- Trim edges and slice into desired shape.
- Serve as required.
