- Prepare 11/2 Cup of Maida.
- Prepare 41/2 cup of oil or warm ghee.
- Prepare 1/2 tbsp of lemon juice.
- It's to taste of Salt.
- Prepare of For Inner Ghughras filling.
- Prepare 1/2 kg of boiled and mashed potatoes.
- Prepare 100 gm of boiled fresh green Peas.
- Prepare 2 tbsps of Oil.
- You need 2 tbsp of green chillies ginger paste.
- You need 1/2 cup of chopped fresh coriander leaves (kothmari).
- It's 1 tbsp of Roasted Coarse Coriander Powder.
- It's 1/2 tsp of Cinnamon and Cloves powder.
- You need 1 tbsp of Saunf (Fennel seeds-Varyali).
- You need 1 tbsp of Aamchur powder.
- It's to taste of Salt.
- Prepare of For Serving.
- It's As needed of Spicy Green Coriander-Chillies Chutney.
- Prepare to taste of Spicy Garlic Chutney.
- You need to taste of Tomato Sauce.

Baked Ghughra chaat & Fried Ghughra instructions
- For outer Ghugras Covering.
- Combine Maida flour oil or ghee, lemon juice and salt mix well..add little water to bind into semi soft dough like roti..
- For Outer Ghugras filling.
- Peel and mashed potatoes when warm.Add boiled peas to it mix well.In non stick pan add oil..heat add green chillies ginger paste.. saute for 30secs.Add chopped fresh kothmari..saute till water dry up..
- Add Prepare mixture of potato peas..mix and cook till little dry.Add remaining dry spices and salt.Mix well and Cool the mixture..
- To Make Ghugras.Take a small portion of dough..Roll out 3cm puri from it.Place 1tbsp of prepared Potato Peas filling..on one side as shown..
- Fold and seal the seam of Ghugras as shown with hand..
- Now make design on outer side seam.. of Ghugras as shown..
- SIMILARLY make all.. Ghugras about 10-12pieces from remaining dough and filling..
- Half bake 6pieces of above prepared Ghugras in preheated Airfryer for 10mins at 180.Cool...completely...at room temperature..
- Again bake these cooled half bake Ghugras in Airfryer for 10mins /till golden brown at 180..
- Half fry remaining Ghugras in hot oil..Cool and again fry for crispiness..
