Ingredients of Sugarfree Coconut Laddoos
- You need 3 tablespoon of ghee.
- It's Handful of roughly chopped cashews.
- It's 1 Handful of golden raisins.
- Prepare 2 cups of freshly grated coconut.
- Prepare 1 cup of powdered jaggery.
- Prepare 2 tablespoon of finely powdered green cardamom.
Sugarfree Coconut Laddoos step by step
- Melt 1 tablespoon ghee in a non stick wok.
- Add the cashews and raisins.
- Sauté on Low heat till the cashews brown slightly and raisins puff up.
- Once done, remove the cashews and raisins from the wok carefully and place them on a plate.
- Now add the remaining ghee in the wok and put it back on the stove to heat.
- Add the coconut and sauté on Low heat for 5-6 minutes.
- Add the powdered jaggery into the coconut and mix well(if using whole jaggery, melt it using some water alongside sautéing the coconut).
- Now on Low heat, keep cooking the mix for 2-3 minutes.
- Once the mixture dries out slightly add the cardamom powder, fried cashews and raisins.
- Mix well and take off heat.
- Let the mixture cool off a bit.
- While still warm create laddoos.
- Let cool completely and store airtight.
- Leftovers can be refrigerated.
