Ingredients of Sugarfree Tomato Barfi

  1. It's 3 of large ripe tomatoes.
  2. Prepare 300 gm of finely grated fresh coconut.
  3. Prepare 150 gm of fresh mava.
  4. Prepare 2 tablespoon of ghee for cooking +1 teaspoon for greasing.
  5. It's 6-8 of pistachios/almonds slivered fine.
  6. Prepare of Edible Silver leaf/Vark if needed.

Sugarfree Tomato Barfi instructions

  1. Wash and purée the tomatoes well in a blender without adding any water.
  2. Melt ghee in a saucepan and pour in the tomato purée.
  3. Stir for 4-5 minutes on medium heat.
  4. Add finely grated coconut and mix well.
  5. Keep stirring until the mix comes together.
  6. Then add the mava after crumbling or mashing it a bit.
  7. Mix well. The mix will be slightly liquidy after adding mava.
  8. Mix and keep stirring till the mixture thickens to halwa/any barfi mix consistency.
  9. Take of heat.
  10. Grease a tray or plate with ghee and spread the mixture evenly starting with one corner.
  11. Sprinkle slivered pistachios and vark (optional).
  12. Let cool and cut into desired shaped pieces.
  13. Refrigerate the leftovers air tight.
