Ingredients of Carrot Barfi

  1. Prepare 2 cup of carrot grated tightly packed.
  2. You need 1/2 cup of milk.
  3. You need 2 tbsp of ghee.
  4. It's 1/4 cup of sugar.
  5. It's 1/4 teaspoon of cardamom powder.
  6. You need 1-2 tbsp of chopped nuts.
  7. You need 1/4 cup of milk powder.

Carrot Barfi instructions

  1. In a large kadai heat 2 tbsp ghee and roast grated carrots.
  2. Saute carrots for 5 minutes.
  3. Add in milk and mix well.
  4. Boil for 5 minutes or till the carrot turns soft,stirring occasionally, till the milk reduces completely and thickens..
  5. Add sugar and mix well till the sugar melts and thickens..
  6. Add milk powder and mix well until lump free.
  7. Add in cardamom powder and mix well. Cook until mixture thickens.
  8. Transfer the prepared mixture into greased plate lined with baking paper, level evenly to form a block.
  9. Top with chopped nuts and press slightly.Set aside until barfi is completely set.
  10. Unmould and cut into square pieces. Serve carrot burfi immediately or store in airtight container until 3-4 days.
