Dahi Bhalla Chaat step by step

  1. Rinse soak urad dal, moong dal overnight or for 4-5 hours. Rinse well..
  2. Drain dal and add it to a blender jar with cumin, salt, green chilli, ginger and hing..
  3. Blend coarsely frist then pour 1 tbsp chilled water and grind as needed until the batter turns fluffy and light.
  4. Remove the batter to a bowl and beat it well for 3-4 minutes to aerate the batter..
  5. Pour oil to a kadai and heat it enough to fry the vadas..
  6. Take small portions of the batter and drop into the oil..
  7. And fry until golden and crisp. Remove to a kitchen tissue..
  8. Drop fried vadas to a bowl of hot water while they are still hot. Rest them for 20 mins..
  9. Gently press down the vadas in-between palms one after the other to remove excess water..
