Ingredients of Vermicelli Upma

  1. It's 2 cups of wheat vermicelli.
  2. Prepare 1 cup of mixed diced vegetables of your choice.
  3. It's 2 tablespoons of peanuts.
  4. It's 10 of curry leaves.
  5. Prepare 1/2 teaspoon of black mustard seeds.
  6. Prepare 1/4 cup of chopped onion.
  7. Prepare 1/4 cup of diced potatoes.
  8. Prepare 1/4 cup of diced carrots.
  9. You need 1 of chopped green chilli.
  10. It's 1 of whole green chilli.
  11. You need 1 tablespoon of chopped corriandar leaves.
  12. Prepare 1 teaspoon of salt.
  13. Prepare 1/4 teaspoon of turmeric powder.
  14. It's 1 tablespoon of cooking oil.
  15. Prepare 1 teaspoon of ghee/ clarified butter.

Vermicelli Upma instructions

  1. 1st heat the ghee in a pan & roast the vermicelli untill the color turns golden..
  2. Now in boiling water boil the vermicellis for 3 minutes with some salt & drain the water completely..
  3. In a pan heat up oil & add mustard seeds, curry leaves, whole green chilli respectively. Then add chopped onions. Fry for a couple of minutes. Then add the raw peanuts & fry until fully cooked..
  4. Now add diced potatoes & carrots into the oil & saute. Add salt & let it cook for a while. Once the vegetables are almost done add 1/4 teaspoon of turmeric & mix it well..
  5. Now add vermicelli & mix carefully with the other ingredients for about 2-3 minutes. Don't need to cook for long,as everything is already cooked at this stage..
  6. Finally add some chopped corriandar leaves & lemon juice & switch off the flame. Serve warm..
