Ingredients of Achari Mutton Dum Biryani
- Prepare 1 cup of Basmati rice, soaked for 30 minutes.
- You need 1 of " cinnamon.
- It's 2-3 of green cardamoms.
- You need 5-6 of cloves.
- You need 400 of gms. mutton on bones, cubed.
- You need 1 tbsp. of ginger-garlic paste.
- You need 1 tbsp. of raw papaya paste.

- It's 1/2 tsp. of turmeric powder.
- You need 1 tsp. of red chili powder.
- It's 1 tsp. of garam masala powder.
- You need 1 1/2 tbsp. of bottled pickle masala.
- It's 2 tbsp. of oil.
- You need of juice of 1/2 lemon.
- It's handful of coriander & mint leaves, chopped.
- Prepare 3/4 cup of fried onions.
- It's 1 tbsp. of ghee (clarified butter).
- Prepare of few strands of saffron mixed in 1/4 cup milk.
- Prepare of sliced onion, lemon wedges & mint leaves to garnish.
The Mutton Dum Biryani Recipe is a lip smacking biryani that is packed with flavours from the spices, caramelized onions and saffron. It is a hearty dish that is made during festivals like Id and or when there are special occasions in the family. The dum cooking technique which we have used in this recipe, brings in the deep flavours from the mutton masala to get combined with the Basmati Rice. I gave a twist to the original recipe by adding some bottled garlic pickle masala.
Achari Mutton Dum Biryani step by step
- Marinate the mutton with ingredients starting from ginger-garlic paste to fried onions (leave aside 1/4 cup fried onions and 2 tbsp. coriander and mint leaves) for 4-5 hours preferably overnight..
- In a heavy bottomed pan or a pressure cooker, add the marinated mutton & top it up with a spread of the rice. Sprinkle the remaining fried onion, coriander- mint leaves, ghee and saffron milk..
- Cover with an aluminium foil tightly around the edges and place a lid on it. Cook on a high flame for 2-3 minutes. Then place the cooker on a heated tawa / griddle and cook on a very low flame for 45 minutes..
- Serve this delicious Biryani along with raita, sliced onion, lemon wedges and green chilies..
