This puran poli recipe is different as dry ginger powder is added to the filling. Plus the poli is also made from whole wheat flour (atta) and all purpose flour (maida).

Ingredients of Puran Poli Recipe/Puran Puri
- Prepare 250 gms of split Bengal gram/ Chana dal.
- Prepare 250 gms of jaggery.
- It's 2 cups of refined flour.
- You need 1 cup of wheat flour.
- It's 1/2 tsp of salt.
- Prepare 1 tsp of cardamom powder.
- It's 1/2 cup of ghee.
- You need 1/2 tsp of turmeric powder.
Puran poli is the Maharashtrian name and if you literally translate it then Puran = stuffing, poli=roti or outer covering. Puran poli is a famous sweet Indian flat-bread. There is the Gujarati puran poli and Maharashtrian puran poli ways of making it. The difference between two is the dals used, the Gujarati puran poli is made using toovar dal while the Maharashtrian puran poli uses chana dal. finally, serve puran poli with ghee.
Puran Poli Recipe/Puran Puri instructions
- Soak Bengal gram in water for about 5 hours. Then drain the water & rinse the soaked dal..
- Take a bowl & add sift flours,1tbsp of ghee, salt to it..
- Mix them well & form a smooth dough with warm water. Cover the dough & keep it aside about 20 mints..
- Boil split Bengal gram/ Chana dal with 3 tbsp of water..
- Switch off the flame after 1 whistle & keep it aside..
- Mash the cooked dal with a masher..
- Place a pan or kadhai & heat 1 tbsp of ghee. Add the mashed dal into the Kadhai. Then add jaggery & mix everything together..
- Fry for about 5 mints & cool the mixture. Add the green cardamom powder to it..
- Take a small portion of dough & flatten it. Stuff 2 tbsp of pooran & seal it. Press in between the palms & rub it with flour..
- Roll into a round about 6 inches diameter with a rolling stick..
- Put it on the hot griddle or tawa & heat it both the sides by applying ghee..
- Fry it till the pooran turns light brown in colour..
- Remove it from griddle & place them in a serving plate..
- The delicious & sweet pooran Poli is ready to eat..
