Ingredients of Puran Poli

  1. Prepare of For Stuffing.
  2. You need 3/4 cup of chana dal.
  3. You need 3/4 cup of jaggery powder/grated.
  4. You need 3 cups of water.

  6. Prepare 1 teaspoon of fennel powder.
  7. Prepare 3/4 teaspoon of dry ginger powder.
  8. Prepare 1/2 teaspoon of cardamom powder.

Puran Poli step by step

  1. Clean and soak chana dal for 1 hour. Drain excess water and add to pressure cooker.
  2. Add water and pressure cook for 6-7 whistles until soft and done.
  3. Strain liquid of chana dal. The stock can be used for making amti or for kneading rotis. we will need chana dal for the recipe.
  4. Heat ghee in a pan.
  5. Add in all spice powders and mix well for few seconds without burning them.
  6. Add cooked chana dal and jaggery.
  7. Mix well until well combined..
  8. Cook over low heat stirring occasionally until mixture dries completely.
  9. Allow to cool completely, you can also mash the mixture well.
  10. While stuffing is cooling, prepare the covering. In a bowl, mix flours and salt. Add turmeric and ghee. You can prepare this completely with wheat flour or mix of both flours as I have done.
  11. Add water little by little and knead into smooth dough.
  12. Cover and rest the dough aside for 20 minutes.
  13. Divide dough into equal portions, dust surface with flour, make small circle from dough portions and place small amount of stuffing at center.
  14. Now seal the dough completely and roll into roti.
  15. Drizzle ghee and spread on hot tawa.
  16. Place prepared poli on hot tawa and cook on both sides.
  17. Smear ghee on both sides, cook until brown spots appear and is golden.
  18. Serve puran poli at room temperature with amti/ghee or milk.
