Ingredients of Mango Rabdi Recipe

  1. It's 1 cup of Mango puree.
  2. You need To taste of Sugar.
  3. It's 2 cup of Milk.
  4. It's 5-6 of Pistachios finely chopped.

Mango Rabdi Recipe step by step

  1. Take 2 cup of milk in a pan and bring it to boil on SIM flame till the milk reduces to 1/2 the quantity.
  2. Keep on stirring the milk periodically while it's kept to boil or else the milk will stick on the bottom.
  3. Keep scraping the sides of the vessel with the help of spoon & mix it with the thickening milk.
  4. Now the milk is reduced to 1/2 it's quantity, it took me 20 min for the milk to reduce & thicken.
  5. Once the milk is reduced to 1/2 it's quantity add sugar and Stir till the sugar gets mixed and melts completely.
  6. Once the sugar gets mixed switch of the gas and alow the reduced milk to cool completely at Room temperature.
  7. Take the Mango pulp in the grinder and grind it in a puree.
  8. Mango Puree ready.
  9. Now add the mango puree to the reduced milk(remember you have to add mango puree to the reduced milk only after the reduced milk is cooled at room temperature).
  10. Stir well till the puree mix well in the reduced milk.
  11. Now the mango puree is completely mixed and the rabdi is ready to serve.
  12. Pour the Rabdi in glass bowl with a help of spoon and do it's topping with finely chopped Pistachios.
  13. Mango Rabdi Ready to eat, you can refrigerate it for some time and have it cool but I prefer to have it at room temperature, it tastes Yummy..
