  30. You need 2-3 tbsp of Cream.

Malai Kofta step by step

  1. Saute for gravy as the first step as that will take the longest. First in a pan, heat oil add cloves, cardamom and cinnamon.once this is heated add roughly chopped onion, chillies and garlic & ginger. Saute until translucent. Optional: Add cashew & raisin as a stuffing in between and give the desired shape. (Also, if for a little more taste saute the cashews & raisin in ghee and then add).
  3. Check the saute if it's ready once it is, let the mixture cool down before using a blender or mixer. Once this is ready. Heat the pan with a tablespoon of oil and add the mixture. Add red chilli powder, garam masala powder, coriander powder and sugar. Cover the mixture and let it cook until the raw smell of the added powder does not go away. Due to cashews, the gravy will thicken, add 1-1.5 cups of water at this stage..
  4. Add 1-1.5cups of water and let the gravy thicken again at this stage the raw smell should have faded and traces of oil will be seen on top. Check for salt and spices and add whatever seems missing at this stage.
  5. While the gravy is cooking and thickening, deep fry the koftas in oil and keep them aside..
  6. Add kasuri methi and put the gas off. Add cream to this gravy when it's hot and mix. Gravy is ready.
  7. Now take a large serving bowl and pour the gravy in it. Slide in the koftas one by one. Decorate it with coriander and some malai(cream).
